Pasta with mozzarella and cherry tomatoes

INGREDIENTS

  • 500 g pasta of your choice
  • 200 g cherry tomatoes
  • 2 cloves garlic
  • Olive oil
  • Sugar
  • 250 g cream cheese
  • 200 g mozzarella
  • 3 tbs herbs of your choice (parsley, mint, basil)
  • Salt & pepper
  • 2 bell peppers, different colours

DIRECTIONS

  1. Boil the pasta for 2 minutes less than the instructions on the package. Save 1 cup of the pasta water, strain, put the pasta in a large bowl and set aside.
  2. Sauté the finely chopped garlic, bell peppers and cherry tomatoes in the olive oil. Cook until wilted and sprinkle with a little sugar.
  3. Add the sauce with the cherry tomatoes to the bowl of pasta, along with the cup of water you saved, the cheeses, salt and pepper, and herbs and mix well.
  4. Place the pasta in the tray, cover with aluminum foil and bake at 200°C for 15 mins.
